Trying out something new, beets and ginger ferment! We have a good crop of these beautiful deep red beets still coming out of the garden and wanted to try something new. I have been reading, and getting major inspiration from, (probably the most beautifully designed book on fermenting) The Noma Guide to Fermentation.

@tickfoot I loved that interview! I started reading the book, but it's denser than I expected. Still, an amazing well of knowledge.
