Regional dishes from the Black Country west of Birmingham UK:
Faggots and (grey) peas.
Faggots being meatballs made from unmentionables and the peas being a slurry of stewed marrowfat peas.
Really a version of Scots Haggis but smaller.

Quite inexplicably I still have mom's cookery book that came with her first gas stove, likely post WW2, as they married in 1940 and didn't really set up home (behind their little shop) until post 1945.
Makes good reading after all this time.

My uncle Bill worked all his life for the Midlands Cooperative Wholesale Society (The Co-Op) in quite a few roles. In one he learned how to skin rabbits efficiently ... dad told me Bill had a way to do it with a single flick of the wrist.

My mother's "speciality" was tripe and onions. Again, Google it.
Mom's family has a small urban garden in which they were able to grow the odd cabbage potatoes and whatever ... they had chickens for the usual purposes.

@genchat@lor.sh @genchat@a.gup.pe On growing stuff, I remember my Grandad trying to grow cucumbers. They were thin and a touch bitter but he was proud of them. Now I can easily grow good ones outdoors. I'm not sure if it's a benefit of #climatechange ? #genchat

Another interesting thing from last night is how regional diet played into food. For example:
Rob (from New England): Waffles with the maple syrup I was fortunate enough to pick up at a local sugar shack would taste great.
Heather (from the South): That looks amazing! My grandparents served the waffles with mesquite honey (my favorite) or sorghum!

#GenChat How I wish the older relatives had made an activity out of teaching younger relatives to cook or bake their special dishes. My maternal grandma made her own egg noodles for her golden chicken soup, but even though I watched her stretch and slice the noodles, then dry them by laying them over chairs, I didn't see the process beginning to end.
